Grandpa’s French Chicken with Tarragon and Vegetables
Ingredients:
- 6-8 chicken thigh cutlets, bone in, trimmed
- 2 celery sticks, chopped
- 1 large brown onion halved and sliced
- 200g button mushrooms
- 3 Spring onions chopped
- 2 garlic cloves, crushed
- 250ml (1 cup) white wine
- 2 tbsp cornflour
- 2 tbsp organic self-raising flour
- 2 tablespoons tomato paste
- 1 tsp ground coriander seed
- 1 litre chicken liquid stock
- 500ml vegetable liquid stock
- 1 tablespoon fresh tarragon
- 350g 'Nicola' potatoes, 4cm cubes
- 1 bunch baby carrots, trimmed
- 200g fresh green beans
Method:
- Soften onion in a pan with oil, then transfer to a slow cooker.
- Coat chicken in flour and coriander seed, brown in a pan, and add to slow cooker.
- Add potatoes, celery, carrots, garlic, stocks, tomato paste, tarragon, and wine to the cooker.
- Cook on high for 4 hours (or low for 8 hours).
- Add mushrooms and beans in the last 30 minutes of cooking. Season to taste.
