This slow-cooker recipe is perfect for a summer meal with fresh beans, squash, and tomatoes.
Ingredients
- 6 to 8 chicken thigh fillets (bone in)
- 3 tbsp olive oil
- 2 tbsp self-raising flour
- 1 large brown onion, chopped
- 1 tbsp ground coriander seed
- 200g yellow squash, thickly sliced
- 450g heirloom ‘Nicola’ potatoes, peeled, thickly sliced
- 2 garlic cloves, crushed
- 2 bay leaves
- 250g cherry tomatoes, halved
- 250ml chicken stock & 250ml vegetable stock
- 2 tbsp whole grain mustard
- 1 tbsp fresh oregano leaves
- 150g green beans & 100g snow peas
Method
- Heat oil in a large frying pan. Cook onion and garlic for 2-3 minutes until golden. Place in slow cooker.
- Season chicken with flour, salt, pepper, and coriander. Brown in pan for 1-2 minutes per side. Place in slow cooker.
- Add potatoes, squash, oregano, bay leaves, and mustard to slow cooker. Add stock and cook on high for 4 hours (or 8 hours on low).
- Add tomatoes, beans, and snow peas in the last 30 minutes of cooking.
- Before serving, remove bay leaves. Season well and serve with crusty bread.
